Blue Rooster Names New Executive Chef
The Blue Rooster Bakery and Café has hired Richard Huarte to lead the kitchen as executive chef, the restaurant announced today.
“Our successes to date have come from the combined strength of the kitchen, the bakery and our staff in the front of the house. Chef Huarte’s strong leadership in the kitchen will allow us to continue our growth as one of the most desirable cafes in central New Jersey,” said Karen Finigan, co-owner of the Blue Rooster.
Huarte has extensive experience running kitchen operations and catering functions, most notably as chef and manager of the TreBar in Princeton. He has worked at Emily’s Café in Pennington, Tre Piani Restaurant in Princeton and Princeton Windrows in Princeton.
“Bob and I have always had a clear vision of what we want the Blue Rooster to be – a place for comfort, quality and value. Chef Huarte shares our appreciation for both fresh food and fresh ideas,” Finigan said.
A graduate of the culinary arts program of Mercer County Community College and American University in Washington, D.C., Huarte is a member of the Chef’s Guild of Central New Jersey and is a former president of the Mercer Hospitality Club.
“I wanted my next position to be in a cutting-edge restaurant where the food is interesting and the guests share adventure and conviviality,” Huarte said. “From the moment I stepped foot on the front porch of the Blue Rooster, I knew it would be a perfect fit.”
